Salted Caramel Chocolate Chip Cookie Bars

Santa will be sad that these won't last until his arrival! Amazing!!! I do have to admit that I love the salty with the sweet contrast, so I tripled (yes...tripled) the salt that the recipe called for. I also sprinkled a little extra salt on top prior to baking. Not too salty in my opinion! These also got the stamp of approval from my husband and our 22 month old. Oh...I used a corse kosher salt. I was also intimidated by cutting the caramel aspect. I got out the scissors and voila! So super easy. I will definitely make these again although I might make smaller cookies! 

Don’t panic if this looks more like bread pudding, right out of  the oven. Once everything has cooled, and can be sliced into bars, I dare you to save some for the rest of the family! OHHH MYY! This is a keeper!

APPLE COOKIES





This was pretty good. I only used half the sugar because I added a cinnamon spice drizzle on top, which made it just sweet enough. I only used 4 Tbls. of butter instead of 1/2 cup shortening. I also added 1 tsp. cinnamon powder as suggested by another member. I think I would double the apple next time because I really couldn't taste any. The batter is very dry until the apples are added, then it becomes more like a drop batter. I used parchment instead of a greased cookie sheet and it worked fine.

Homemade Turtles



I just made turtles last night and I tried two different methods with the pecans, the first was clumping the pecans into mounds as your recipe states.
The second method is to chop the nuts and cover a parchment lined cookie sheet with them. Pour the carmel on top of the nuts in circles the size you want your turtles to be and then cool (I cooled mine outside). When cool they easily come off the parchment & then can be topped or dipped. I found the second method to be faster & was able to make my turtles all the same size.

This is such a good idea for holiday gifts! I have to advise though, I made the recipe as written twice and both times it was a flop (using two different brands of caramel). The caramel is simply too loose, making it impossible to package them for gifts. It’s too loose to dip entirely even. I ended up melting my caramel in the microwave with no added liquid on the third try and that worked beautifully..

Key Lime Cooler Cookies



I made these yesterday, because they sounded refreshing. They are! They are so good, in fact, I am making another batch with the leftover limes. I’m guessing they will freeze well.

Chewy Sugar Cookies

My original intent was to make these sugar cookies and roll them in orange sugar to be festive for October, but I couldn't find any orange sugar in my baking cabinet. They still came out pretty though. They are similar to the chewy Pepperidge Farm cookies, but they aren't quite as thick. I try not to eat much sugar, but I've already had 4 of these. That's how good they are!





Chewy Sugar Cookies

Ingredients:
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup sugar for rolling cookies


Directions:
  1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
  3. Using a mixer, beat together the butter and sugar until smooth and very fluffy. Beat in egg and vanilla extract. Gradually blend in the dry ingredients.
  4. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.
  5. Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Lemon Butter Cookies




I just got done baking these cookies and enjoy them!! The only substitute I made was using 4 tsp of lemon juice in place of the lemon zest–I didn’t have any lemons or oranges on hand. As a side note: If you are expecting these cookies to come out with the texture of a basic sugar cookie, you’re going to disappoint yourself. For me, these cookies almost have a tea-cookie-like consistency; melt-in-your-mouth and creamy/thick.

Softbatch Cream Cheese Chocolate Chip Cookies





I just made these a couple nights ago and they were amazing! The cream cheese definitely makes a difference. They are still nice and soft even after a couple days. I did a mix of semi sweet and milk chocolate chips. But maybe next time I will add less chocolate chips because I’m more of a cookie dough person.
